My New Favorite Recipe

This stuff is so good! Very light and yummy, but totally filling and good for you (dad would call it "rabbit food"). I have had it three times this week.... The recipe is from the Better Homes and Gardens Cookbook.
2 2/3 C dried pasta (I used whole wheat penne)
1 medium onion (I used green onions)
2 cloves garlic, minced
1 T olive oil
3 C coarsely chopped, seeded tomato
4 C arugula (I used spinach)
Salt and pepper
1/4 C Gorgonzola or Parmesan cheese (I used Parmesan)
1/4 C pine nuts or almonds (we liked it better w/o the almonds, haven't tried the pine nuts yet)
Cook pasta. In a large skillet, cook onion and garlic in olive oil. When onion is tender, add tomatoes, salt, and pepper. Cook until tomatoes are warm and release their juices. Add spinach and cook until it starts to wilt. Top pasta with tomato mixture and sprinkle with nuts and cheese.
Today, I decided to forgo the pasta, and just ate the spinach and tomatoes in a bowl with a slice of bread. Yum.

In Progress

What you see here are the beginnings of my very first legitimate quilt (meaning it's more complicated than a bunch of denim squares strung together... but not much). It's been interesting so far.

The top is almost finished and I like the way it's looking. However, I have a feeling that when it comes time to pick fabric for the back and do the actual quilting and binding, this lovely little project will end up stashed somewhere in the top of my closet until I get the guts to make such a permanent decision. It's the story of my life, really.

Round Two

I've been on a bit of a blogging hiatus. A friend of the family told me about this blog and I checked it out. I was entertained and a bit embarrassed. I don't want to be "one of those people." Yuck. I've always thought that blogging was a strange phenomenon anyway... who would ever want to read all of the things that go through my head? So I abandoned the blog, and spent the summer hanging out with Mr. Domestic while he was out of school and playing outside with the Little Girl.

School has started, it's getting cold outside, and I seem to have a little more time on my hands. I've found that I am in need of a hobby. A cheap hobby. I'm going to give this thing another shot. I like the idea of having a place to put my thoughts and track my progress in becoming a "domestic" wife and mother (not to be confused with "domesticated").

The word domestic may ruffle some feathers. At first, it sounds old fashioned and maybe even a bit chauvinist. But thanks to, the real meaning of the word is a perfect description of how I view my role as a wife and mother.
